This is always a favourite. Sometimes a nice way to clean out the fridge at the end of the week. Any variety of vegetables and meats can make this dish always great.
Ingredients
- 3 eggs
- 3 cups cooked rice Best when rice is cold.
- 1/2 cup sliced chorizo pepperoni
- 1 clove chopped garlic
- 2 cups frozen mixed vegetable
- 4 tbsp Kikoman rice seasoning
- 2 tbsp coconut oil
- salt & pepper
- 1/2 cup cooked ground beef Best if beef is not hot.

Instructions
- Whisk eggs in a bowl add a pinch of salt. Cook in skillet. Let it cook like an omelet so you will be able to cut it into big pieces after. Take out of the pan and leave on the side.
- Add the chopped garlic and chorizo saute.
- Add the ground beef, the cooked egg and the frozen veg. At this point you can turn the heat up to med high. Get that sizzling going. Keep staring as to start getting everything nice and hot.
- Its best to use cold rice. Break the rice apart as much as you can. It will be a bit clumpy from cooling down.
- Add the rice and mix well. Add the rice seasoning and keep mixing. When mixed all through serve.
