Greaseless Beef Meatballs

I love Meatballs!

I was asked how to make acidic dishes like tomato based sauces that are easier to digest for people with heart burn. But adding a little baking soda to the sauce I have found that this helps.The sauce will bubble and froth. It becomes very air-rated. It’s a similar reaction like vinegar and baking soda for a volcano experiment.

When the baking soda has cooked out the sauce settles and becomes thicker. The colour gets richer. I like to add a bit of brown sugar to counter act any flavour from the baking soda.

Instructions
Meatballs
  1. Mix all the ingredients for the meat. Roll the meat into balls about 3oz size. Pre heat 10" skillet to med high for 4 min.
  2. Add the meatballs no oil and brown for 5 min. Try not to move them until the meat has browns nicely. After flipping the meat let brown for a few minutes.
For the Sauce
  1. Add the garlic and onions first. Then add the rest of this group. Shake the pan a bit to loosen op the meat balls. Check the heat if getting to hot turn down.
  2. Add the crushed tomato so the meatballs are just covered. give a gentle stir mix all ingredients and simmer for 15min on med low heat.
  3. If the sauce is reducing to much add some beef stock. Sprinkle the baking soda. This counteracts with the acidity.Helps if you get heartburn. Make sure to mix it in well. It will froth and bubble. When it is cooked in the sauce will become a little more dense and darken in colour. Add the brown sugar, check for seasoning.
